Had just a sample at the Incredible Food Show but didn't get a chance to talk, there were so many people sampling! I'm very glad to know where I can purchase, the cheese was absolutely amazing!

Tried a new idea with delicious results. The aged walnut cheese is wonderful in combination with some harvest grape focaccia (Sciacciata all'uva). The recipe I used for the focaccia contained a little toased walnut oil, but it would be great without that too if you have a recipe you like. Happy harvest time!

Che formaggio delizioso!!! Mi ricorda il sapore della mia bella Napoli. Sono contenta di avere trovato delle caciotte cosi saporite anche in America. Complimenti. I cannot wait to eat some more. Iolanda

Got a chance to do an herbed lentil salad with the herb cheese crumbled on top. Very delicious and a BIG hit with my guests. Got to try the new fresh goat cheese this week at the farmers market...WOW. Thanks.

The aged Alpina is wonderful with fresh asparagus. All varieties go especially well with wine and crusty bread.

Fabulous artisan cheeses, delicious and interesting at all stages of aging I've been able to try. They're great alone, but I've also loved the walnut on good bread with a salad of local greens with a walnut oil/sherry vinaigrette, and the the alpina crumbled on homemade black bean soup...I'm also thinking the herb would be very interesting crumbled on a salad of le puy lentils with herbs... Thanks!

Phenomenal cheese. I'm so happy that it's available through the Lexington Farmers' Market. Can't wait to try a different variety each week.

Yum. First tasted it at first 09 Farmer's Market. Favorite was the one aged for a year. Bought a wedge, and now waiting for the walnut goat cheese to be available. Great mellow flavor like fresh goat cheese should have.
